Prepare the yeast dough
Warm the whole milk until lukewarm. In a bowl, mix the lukewarm milk with the dry yeast and granulated sugar, then let it sit for about 5 minutes until a light foam forms.
Add the plain wheat flour and fine salt. Knead the dough with a food processor or by hand for about 5 minutes. Then incorporate the softened butter and knead for another 5 minutes into a smooth, pliable dough.
Shape the dough into a ball, cover, and let it rest in a warm place for about 50–60 minutes until doubled in volume.
Chef's tip
The curry filling must be completely cooled and nice and thick before filling, so the yeast dough does not get soggy and the edges can be sealed cleanly.
