Pat the beef tenderloin (rump steak) dry and cut into thin, bite-sized strips. Slice the bacon into strips about 1 cm wide as well. Peel the onion and cut into thin half-rings. Peel the garlic and finely chop.
Wash the green and red bell peppers, remove the seeds, and cut into thin strips. Wash the limes under hot water and cut into wedges. Wash the fresh cilantro, shake dry, and coarsely chop.
Cooking in the pan
Heat a large, heavy frying pan or cast-iron skillet. Fry the bacon strips over medium heat until crispy and the fat renders out. Remove the crispy bacon and set aside on a plate.
Chef's tip
For extra heat, you can slice a fresh jalapeño into thin rings and fry it along with the bell peppers.
As a side dish, fresh guacamole or a fruity salsa roja go excellently with it.
