Preheat the oven to 185–190 °C top/bottom heat and prepare a muffin tin for 12 muffins.
Cut the wheat tortillas into 4 parts (quarters) each. Place one tortilla piece into each indentation of the muffin tin to form a small basket.
In a large bowl, thoroughly mix the beef mince with the eggs, finely chopped onion, 50 g grated Gouda, milk, cumin, chili powder, pressed garlic, finely chopped coriander, salt, pepper, and breadcrumbs. Form 12 equally sized balls (approx. 65–70 g) from the mixture and place them into the tortilla baskets.

Serve the muffins with a dollop of sour cream or fresh guacamole for the full Tex-Mex experience!
