Preheat the oven to 200 °C top/bottom heat and line a baking sheet with baking paper. Finely dice the red onion and finely chop the garlic cloves. Rinse the black beans in a sieve and drain well.
Heat 1 tbsp olive oil in a pan. Sauté the diced onion and garlic over medium heat for about 2 minutes until translucent. Add the minced beef and fry over high heat until crumbly, fully cooked, and lightly browned.
Season the minced beef generously with smoked paprika, ground cumin, a pinch of salt and pepper. Stir in the drained black beans and crush them slightly with a wooden spoon to create a cohesive filling. Remove the pan from the heat and let it cool briefly.
Chef's tip
For extra crispiness, you can also bake the flautas using the fan oven setting (convection 180 °C) – this makes them evenly crispy all around.
Flautas taste fantastic served with fresh guacamole or a spicy tomato salsa for dipping.
