Ingredients
- 40 g Cheddar (coarsely grated)
- 60 g Gouda (coarsely grated)
- ½ small onion (approx. 25 g)
- 5 g fresh parsley (or cilantro)
- 1 medium tomato (approx. 100 g)
- 2 wheat tortillas (⌀ approx. 24 cm)
- 150 g cooked minced beef
- 60 g corn kernels (drained)
- 1 pinch salt
Method
- 1First, prepare the cheese mixture: In a small bowl, combine the two coarsely grated cheeses (Cheddar and Gouda).
- 2Peel the onion and finely chop it along with the parsley (or cilantro). Dice the tomato into small cubes. Put everything into another bowl, season with a pinch of salt, and mix well.
- 3Heat a large pan (⌀ min. 24 cm) over medium heat. Place one tortilla in it and spread half of the minced beef and half of the cheese mixture on top. (Tip: If you don't have pre-cooked minced meat, brown 180 g of minced beef in 1 tbsp oil for about 5–8 minutes until cooked through). While the cheese melts, add half of the corn and the tomato mixture.
- 4Fold the tortilla in half and fry for about 20–30 seconds per side until golden brown and the cheese is completely melted. Remove the finished quesadilla from the pan and repeat the process with the second tortilla. Cut into triangles and serve immediately.
