Preparation method

Cook the sushi rice and, while still warm, mix with sesame oil and sesame seeds.

Cut the carrot and cucumber into thin strips; briefly blanch the spinach and drain.

Cut the nori sheets in half; spread a thin layer of rice along the bottom edge.
Chef's tip
To serve: Mix 2 tbsp soy sauce with 1 tsp sesame oil and ½ tsp mustard. For a snack: Pack in a lunchbox with a lid. Best consumed on the day of preparation; keeps in the fridge until the next day.
