Diese fluffigen Bananen-Haferflocken-Pancakes sind das perfekte gesunde Frühstück für die ganze Familie. Ohne Mehl und raffinierten Zucker, dafür vollgepackt mit Ballaststoffen und natürlicher Süße aus reifen Bananen. Schnell zubereitet und unwiderstehlich lecker!

- 240 g fine rolled oats
- 3 ripe bananas
- 6 free-range eggs M
- 30 g unsalted butter
- 1 tbsp vegetable oil for brushing the pan
- 150 g fresh berries (raspberries, blueberries)
- 150 g natural yogurt 3.5% fat
- 30 ml organic maple syrup
- 1 tbsp powdered sugar for dusting
- 1 handful of fresh mint for decoration
Finely mash the bananas with a fork in a bowl. Add the rolled oats, eggs, and soft butter, and mix everything into a smooth batter.
Brush a pan with a little vegetable oil. Place one tablespoon of batter at a time into the pan and form pancakes with a diameter of approx. 8–10 cm. Fry over medium heat on both sides until golden brown.
Serve the pancakes warm with fresh berries and a dollop of natural yogurt. Drizzle with maple syrup, lightly dust with powdered sugar, and garnish with fresh mint leaves.
Chef's tip
For an especially fine texture, you can briefly blend the rolled oats in a blender beforehand.
