Ingredients for Fajitas & Marinade

  • 700 g pork tenderloin
  • 750 g bell pepper mix (red, yellow, green)
  • 100 g red onions
  • 1 piece lime
  • 4 tbsp extra virgin olive oil
  • 3 cloves fresh garlic
  • 1 piece lemon juice
  • 1 package fajita spice mix
  • 1 pinch fine iodized table salt
  • 1 pinch black pepper

For Serving

  • 1 package wheat tortillas
  • 1 jar Salsa Verde
  • 1 cup sour cream

Meat Preparation

    First, prepare the marinade. In a bowl, combine the finely chopped garlic cloves with lemon juice, the fajita spice mix, salt, pepper, and 3 tbsp of olive oil.

    Wash the pork tenderloin, pat dry, and cut into strips. Add to the marinade and mix well, ensuring the meat is evenly coated. Marinate for at least 1 hour.

    Preheat the grill or a pan to medium heat. Sear or grill the meat strips on all sides (approx. 3-5 minutes).

Prepare Vegetable Mix

    Cut onions and bell peppers into fine strips.

    Heat the remaining olive oil (1 tbsp) on the grill or in a pan. Add the sliced onions and bell pepper strips and sauté until crisp, about 2 minutes.

    Add the cooked meat strips to the vegetable mix and stir everything well. Drizzle with fresh lime juice.

Arrange and Serve

    Briefly warm the tortillas on the grill or in a pan. Then, spread the meat and vegetable mixture onto them.

    Finally, garnish with sour cream and Salsa Verde, tightly roll up the tortillas, and enjoy immediately.
