Preparation
Larger courgettes are peeled and the seeds removed. For smaller fruits, wash the skin thoroughly and remove the stem base. Young courgettes can also be used raw for salad. Large fruits are particularly suitable for stuffing, e.g. with a meat farce, or as a delicious steamed vegetable.
