This glossy, purple Blün eggplant of the Kylie variety comes fresh from Austria's first aquaponics farm in Vienna. Grown sustainably in a resource-saving circular system, this local specialty is perfect for grilling, roasting, or stewing in your favorite dishes. It is freshly harvested and should be stored in a cool place, but never in the fridge.

Description

Our melanzani from the black oval segment of the Kylie variety is club-shaped, approx. 20 cm long and shiny purple. Not for nothing was this variety named after a female star. It is the star of Levantine cuisine, as well as one of the main protagonists of vegan cuisine. There is also a "sister variety", this one is violet-white striped. Because of their bitter substances, these varieties of melanzani are not suitable for eating raw. However, they are good for frying, grilling, stuffing, steaming or boiling.
Store in a dark and cool place (not below 5° Celsius)

Resource-saving circular economy with full flavour

The Viennese start-up BLÜN produces fish and vegetables in a sustainable circular economy, this system is called aquaponics and works like this: The BLÜN fish grow up slowly in Viennese high-spring water. The water in the basins is exchanged to a certain extent every day, but instead of simply being drained away, it is reused as a source of nutrients for the vegetable plants next door - this is how our juicy tomatoes, crunchy peppers and aromatic melanzani are produced, which taste like being on holiday in the south but actually come from very close by.
