Simmer & Shred Chicken
Bring the chicken broth to a boil in a large soup pot. Finely slice the ginger, lightly crush the garlic cloves, and add them along with the chicken breast to the simmering broth.
Gently simmer the chicken over medium heat for about 20 minutes until the meat is completely tender and cooked through. Then remove the meat from the broth, let it cool slightly, and shred it into bite-sized strips using two forks. Strain the broth through a sieve and keep warm.
Prepare Spicy Seasoning Paste & Add-ins
In a bowl, thoroughly mix the shredded chicken with the chili flakes, soy sauce, aromatic sesame oil, and freshly ground black pepper so the meat fully absorbs the bold seasoning.
Chef's tip
Tip: For an especially intense roasted aroma, toast the sesame seeds before serving at 160 °C convection in the oven or in a dry pan until golden brown.
If you prefer a milder heat, you can halve the amount of chili flakes or refine the soup with a beaten egg slowly stirred into the simmering broth during the final minutes of cooking.
