
Ice Cream Sandwich with Chocolate Chips

- 16 pcs Cookies
- 8 tbsp Vanilla ice cream
- 100 g Dark chocolate
Finely chop or coarsely grate the dark chocolate with a sharp knife and place it on a flat plate.
Place a generous tablespoon of vanilla ice cream on the flat side of a cookie. Carefully place a second cookie on top and press lightly to form a sandwich.
Smooth the edges of the sandwich where the ice cream protrudes with a spoon and immediately roll them in the chopped chocolate pieces. Enjoy the finished ice cream sandwiches immediately or store them in the freezer for later.
Chef's tip
For an extra fruity note, you can also use fruit ice cream or sorbet. The sandwiches taste particularly good if they are frozen again for 30 minutes after being rolled in chocolate.
