Rana tagliatelle with free-range eggs 250g
Fresh egg pasta.
Recommendation for preparation:
- Bring lots of fresh water to the boil in a large pot. Add a pinch of salt and carefully add the pasta. Sometimes fresh pasta can stick together a bit. If this happens, don't pull it apart - the pasta will separate by itself as it cooks.
- Boil for two minutes, no longer, then drain thoroughly.
- Toss in melted butter or extra virgin olive oil and top with freshly grated cheese or favourite sauce...
About the manufacturer:
1960: During almost ten years in the family bakery, Giovanni decided he wanted to keep his hands in doughs, but was inspired by the manual dexterity of local grandmothers and focused his attention on a special pasta made by hand: tortellini. Quel fiol xe mato, in Venetian dialect for "this child is crazy" said his mother back then when she saw him handling eggs, flour and rolling pin for the first time.
On 28 March 1962, the doors of the Rana pasta shop officially opened. A great goal to celebrate. But to be satisfied now would be absolutely unthinkable! Two hands to knead the tortellini dough were no longer enough: Soon there were four, then eight, then sixteen, until Giovanni understood that the moment had come to adopt a new strategy in order to continue growing.
1971: The seventies were just around the corner and the company needed a larger plant. Giovanni spontaneously thought of building in San Giovanni Lupatoto, near his new house.
During these years, not only the business grew, but also Giovanni's ambition. As his attachment to his homeland grew stronger, so did the idea of exporting his products beyond Italy's borders
.1980:When Gian Luca, his only son, finally took over the management of the company, Italian families had long loved Giovanni and his tortellini. As he had learned from his father, he too dreamed big and decided to bring Giovanni Rana products and the pleasure of good Italian cuisine to all the countries of Europe.
In a few years, his dream came true, but with such a large customer base, a new way had to be found to make himself known and to capture people's hearts. The company thus invested in advertising and Giovanni's face still contributes to it today.
2012: The Rana family's dream of exporting their products to America not only came true, but became much bigger! Almost simultaneously, they opened the first plant in Chicago and the first restaurant in New York in the exclusive Chelsea Market district.
