Masterpiece

Preparation method
Preparation & searing
Pat the goulash beef dry. Peel and finely chop the onions and garlic. Peel the carrots and celeriac and cut into bite-sized pieces, wash the leek thoroughly and slice into rings.
Heat 1 tbsp of clarified butter (ghee) in a large Dutch oven. Sear the goulash beef in batches all over over high heat until nicely browned, then remove and set aside briefly.
Setting up the stew & braising
Heat the remaining clarified butter (ghee) in the same Dutch oven. Sauté the onions and garlic until golden yellow. Stir in the tomato paste and roast briefly. Add the carrots, celeriac, and leek.
Chef's tip
To ensure the Tyrolean bacon dumplings turn out wonderfully light and fluffy, compress the mixture only gently with your hands and let it rest for a few minutes before shaping.
The beef stew often tastes even more aromatic when reheated the next day, as the spices and the tender meat infuse thoroughly.
