Ingredients
Preparation method
Preparation
Gently pat the plain tofu dry and cut into approx. 2 cm cubes. Peel the potatoes and cut into bite-sized cubes. Wash the zucchini, quarter lengthwise, and slice.
Clean the shiitake mushrooms and slice them. Finely chop the fresh garlic. Wash the spring onions and slice into thin rings, separating the white parts from the fresh green tops. Slice the red chili pepper into thin rings.
Cooking & Serving
Heat the sesame oil in a pot over medium heat. Gently sauté the chopped garlic and the white parts of the spring onions for about 1 minute until fragrant.
Chef's tip
If you prefer it traditionally spicier, you can also sauté a teaspoon of chili flakes or gochujang paste together with the soybean paste.
Doenjang Jjigae tastes even more aromatic when reheated the next day, as the tofu and vegetables absorb the broth even better.
