Preheat the oven to 180 °C top/bottom heat. Grease a baking dish with a little butter.
Wash, peel, quarter, and core the pears, then cut them into bite-sized wedges. Drizzle with a little fresh lemon juice and mix with a pinch of cinnamon.
Separate the eggs. Whip the egg whites with a pinch of salt until stiff and chill until needed.
Chef's tip
The bake tastes especially good with juicy Williams or Abate pears. If you like, you can also stir a teaspoon of real rum into the yolk mixture.
This pairs wonderfully with stewed berries, cranberry compote, or a scoop of vanilla ice cream.
