Organic brook trout fillet (Salvelinus fontinalis) has a pleasantly firm texture with a strong flavour.
Due to the organic farming and organic feeding, there may be variations in the colour of the "meat".
Fish is ideal for people who want to eat a balanced and conscious diet.

The cleaner the water and the lower the water temperature, the tastier the fish. In Decleva's ponds, the water from the springs flows directly from the Hochschwab massif and offers ideal living conditions for the fish. The fish grow slowly. They need 2.5 to 3 years to reach a size of 1 kg.
