1 fillet of Waldviertler organic carp (Cyprinus carpio) with scaled skin, scored flesh. When scoring, the fish bones are divided by fine cuts and are then safe to eat when consumed. Carp is a traditional Christmas dish in eastern Austria.
Preparation: Lightly flour the skin side and fry in a pan, or classically breaded and baked.
Origin: Aquaculture Austria. After being fished from the Waldviertler ponds, the carp are kept for a few more days in the freshwater ponds of Kaus Decleva. The fresh water from the Hochschwab massif in Mariazell ensures that the carp do not "grunt" and taste of mud, so nothing stands in the way of enjoyment.
