2 pieces of beef cheeks (cheeks, backerl), frozen.

1 piece is ideal for one serving as a main course. The cheeks are heavily streaked with connective tissue, which breaks down during slow braising and becomes wonderfully tender.

Before preparing, thaw the cheeks gently in the refrigerator overnight.
