Clearspring Japanese Buckwheat Soba Noodles are made in Nagano by a third-generation producer in a region renowned for the premium quality of its Shinshu Soba and long history of soba making. Deliciously versatile, wheat-free noodles with a nutty buckwheat flavour. Known in Japanese as 'Juwari Soba', meaning 100% Soba. As buckwheat contains no gluten or binding agents, making these hearty, much-loved noodles requires great skill and time. The kernels are milled several times, giving the noodles a deliciously soft texture that readily absorbs the flavours of the broth or dressing they are served with.
