The pig breeding of Schreckbauer Sepp is very special. Mainly pigs of the Duroc breed are bred, also some Mangaliza or Ibericos are among them. These original breeds have higher proportions of essential fatty acids, which is additionally supported by plenty of exercise, rooting and cooling possibilities in outdoor farming. The main focus is to achieve a top marbling (intramuscular fat), which makes the meat tender and juicy. The animals on this farm enjoy real free range with opportunities to root and cool off in the water. A stress-free slaughter directly on the farm is extremely important for the breeder and master butcher Sepp Mayer. This is how the unique quality of his pork is achieved, which you can see, feel and of course taste.

About the producer:
Behind echt-Schreckbauer is the master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofen, Gainfeldtal. Here - on a farm that is over 300 years old and at an altitude of about 1000m - he and his family breed organic cattle, organic sheep and free-range pigs. The farm butcher's shop is also located directly on the farm. This was optimized and expanded in 2022. This means that high-quality products can now be created. "Sepp" is particularly proud of the new climate-controlled rooms and the dry-aging maturation room, in which choice cuts of organic beef and free-range pork often mature for weeks to optimize flavor and tenderness.

The animals live on the organic farm and enjoy a life in the great outdoors, which eliminates long transport routes and allows them to be slaughtered stress-free directly on the farm. All products are made with loving care and craftsmanship.
