About the Producer:

Echt Scha(r)f is the organic farm Schreckgut ("Oberseidl") in Bischofshofen's Gainfeldtal. Here – on a farm over 300 years old – master butcher Josef "Sepp" Mayer and his wife Michaela raise sheep, turkeys, and pigs. The main focus is on sheep farming with about 70 ewes, currently around 30 lambs, and 3 breeding rams. The animals live in spacious stables and regularly graze on the fresh mountain meadows that lushly surround the farm. In summer, a large portion of the animals graze on mountain pastures at altitudes of 2,000 meters and more. Here, mountain herbs grow, which make the animals' meat incomparably fine in taste. The butchery and the attached farm shop are located directly on the farm. Here, the finest meat and sausage delicacies are produced and offered directly for sale. 

The Mayer family always handles the rearing and care of the animals themselves. They are fed predominantly with hay from their own farm. Generous pastures provide the herd with additional fresh feed and adequate exercise. By exclusively using natural materials for the stables (wood and natural stone), an all-around healthy indoor climate is created. The stables can be visited during the farm shop's opening hours. This way, every visitor to the farm can get an impression of the animals' purely natural and truly organic living environment.
