These are traditionally processed and refined with olive oil and a touch of wine vinegar to achieve a deliciously creamy consistency. Schenkel anchovy cream 100g
The anchovy fillets used for this are still processed in the traditional way: after being caught, the anchovies are sorted according to size - only the most beautiful anchovies are used for Schenkel's anchovy cream -, cleaned, layered in traditional wooden barrels, covered with salt and water, and slowly pressed with the help of heavy stones. After a maturing period of 3 to 6 months, the anchovies are drained and rinsed.
To achieve the deliciously creamy consistency of our anchovy cream, olive oil and a little wine vinegar are slowly added while the anchovy fillets are being crushed.
Ideal for making anchovy butter, for example: mix 2 parts butter with 1 part anchovy cream!
