Itineraire des Saveurs Bleu d’Auvergne PDO
Bleu d'Auvergne is a blue cheese produced in Auvergne, a mountainous region with volcanic soils, distinct seasons, and abundant pastureland. To produce one Bleu d'Auvergne, 20 to 25 liters of milk are required. After a ripening period of at least 4 weeks, the cheese weighs between 2 and 3 kilos.
The Protected Designation of Origin (PDO) is the European equivalent of the controlled designation of origin, which represents national recognition.
The Protected Designation of Origin implies a close link between the product, the terroir, and human talent. The PDO guarantees the origin of the product and traditional production methods. It gives the cheese its entire character.
To be recognized as a PDO, the cheese must:
- come from a specific and defined production area, using milk from this area
- meet specific production conditions
- have a recognized reputation and excellence
- be subject to an authorization and control procedure
