The Duettmelanzani contains one white and one purple eggplant in the banderole.
White eggplants have essentially the same properties as purple eggplants and taste similar. However, they differ in a few points:
- White eggplants contain less bitterness, which was the goal of their cultivation. The bitter note of the eggplant is mainly due to so-called anthocyanins.
- The flesh of the white eggplant also differs somewhat in consistency from that of the conventional varieties: It is more tender, juicier and contains smaller seeds.
- Some white varieties also develop a mushroom-like flavor.
About the producer
We are a long-established Viennese traditional company that thinks modern. At the location in Vienna - Simmering since 1886, we can draw on the gardening experience of 5 generations in a total of over 135 years. That is why it is very easy for us to always look at tradition with one eye, while the other looks at progress. In 1930 our parents and grandparents planted cucumbers for the first time, which we specialized in over the coming decades.
What was planted in so-called "hotbed windows" (which were the precursors of greenhouses) is now produced using state-of-the-art technology. Nevertheless, we have kept one of these old "windows", it reminds us every day: no matter how far progress develops, without the right feeling for the plants it will not work!
Together we produce on a total area of 2.4ha on the outskirts of Vienna. Our greenhouses are heated with the city's own district heating. This is significantly more resource-saving, as no extra gas, wood or oil has to be purchased. Conserving resources is generally a major issue in our company. We try to avoid disposable plastic and work with cardboard boxes.
We produce the young plants ourselves. This saves the long transport routes from the Netherlands and we have an eye on our plants from germination and can thus guarantee outstanding quality over the entire cultivation period.
Storage recommendation
Eggplant is one of the cold-sensitive vegetables and should therefore not be stored in the refrigerator.
