Prime Beef Wagyu F1 Landjäger are handcrafted dry sausages made from high-quality Wagyu beef of the F1 generation. These traditional sausages impress with their intense flavor and tender, juicy texture. With a harmonious seasoning and a slightly smoky note, they are ideal for a snack, hiking or as a sophisticated snack in between. The combination of exquisite Wagyu quality and traditional production makes the Landjäger a special treat.
Wagyu F1 crossbreed:
F1 Wagyu is a crossbreed of the well-known Wagyu cattle with a typical meat breed, such as Simmental Fleckvieh, Black Angus or Pinzgauer cattle. F1 means that it is a direct cross between a purebred Wagyu cattle and another cattle breed. In contrast, a purebred Wagyu cattle would be called Fullblood Wagyu.
In Wagyu cattle, the intramuscular fat is particularly intensely developed due to genetics and feeding, which makes the meat buttery tender and it melts in the mouth. When crossed with a classic meat breed, the intramuscular fat storage decreases somewhat, but the meat flavor is all the more pronounced.
About the producer:
Behind echt-Schreckbauer is the master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofen, Gainfeldtal. Here – on a farm that is over 300 years old at about 1000m – he and his family breed organic cattle, organic sheep and free-range pigs. The farm butcher's shop is also located directly on the farm. This was optimized and expanded in 2022. This means that high-quality products can now be created. "Sepp" is particularly proud of the new climate-controlled rooms and the dry-aging maturation room, in which choice cuts of organic beef and free-range pork often mature for weeks to optimize flavor and tenderness.
