About the producer:

Behind echt-Schreckbauer is the master butcher Sepp Mayer and his organic farm Schreckgut ("Oberseidl") in Bischofshofen, Gainfeldtal. Here – on a 300-year-old farm at about 1000m – he and his family breed organic cattle, organic sheep and free-range pigs. The farm butcher's shop is also located directly on the farm. This was optimized and expanded in 2022. This means that high-quality products can now be created. "Sepp" is particularly proud of the new climate-controlled rooms and the dry-aging maturation room, in which choice cuts of organic beef and free-range pork often mature for weeks to optimize flavor and tenderness.
