The Apple Mango: An Exotic Taste Experience
The Apple Mango (often the variety Kent or Keitt) lives up to its name. With its round, plump shape and bright red-yellow skin, it visually resembles a large apple, but conceals a tropical fireworks display within. Among connoisseurs, it is considered one of the noblest mango varieties worldwide.
What makes it special:
-
Texture: The flesh is buttery soft and almost completely fiber-free.
-
Taste: A perfect balance of intense sweetness and a subtle, refreshing acidity.
-
Aroma: Deeply fruity with a delicate hint of honey.
Origin & History
Originally, the mango comes from South Asia, particularly from India and Burma, where it has been cultivated for over 4,000 years.
However, the specific cultivation of the "Apple Mango," as we find it in supermarkets today, was perfected in the 20th century in Florida (USA). Today, it is grown in the tropical belts of the earth, especially in:
-
Brazil and Peru (main suppliers for Europe)
-
West Africa (e.g., Ivory Coast)
-
Israel
Storage: How to keep it perfect
Mangos are sensitive when it comes to cold. To fully preserve their aroma, please note the following:
-
Room temperature: Ideally, store the mango at room temperature. This way, it ripens perfectly.
-
The ripeness test: A ripe apple mango smells wonderfully sweet at the stem end and yields slightly to gentle finger pressure. By the way, the color of the skin is not a reliable indicator of ripeness!
-
Refrigerator taboo: Only if the mango is already fully ripe and you want to eat it in 1–2 days, may it be placed briefly in the vegetable compartment (not below 8 °C). Too much cold leads to a "cold shock" and the aroma is lost.
Preparation: Tips from the Pro
The apple mango is a true all-rounder in the kitchen.
-
The "Hedgehog Cut": Cut the mango past the flat pit on the left and right sides. Score the flesh of the halves in a grid pattern down to the skin (without piercing it). Push the skin upwards – and your bite-sized cubes are ready.
-
Enjoy pure: Whether in fruit salad, muesli, or simply straight from the spoon.
-
Savory Pairing: The sweetness of the apple mango harmonizes fantastically with spicy chilies, fresh cilantro, or as a chutney with roasted meat and fish.
-
Smoothies & Bowls: Thanks to its fiber-free texture, it can be excellently processed into a creamy puree.
Small tip: If you buy a mango that is still very firm, place it in a paper bag together with an apple. The ripening gas ethylene emitted by the apple accelerates the mango's ripening process.
