PUMPKIN PANCAKES

You've probably never eaten pumpkin like this before! Passion fruit adds a fruity note to this breakfast recipe, and thanks to buckwheat flour, the pancakes are even gluten-free.

          150 g Hokkaido pumpkin
          50 g buckwheat flour
          100 g soy quark
          ½ tsp baking powder
          1 pinch ground cinnamon
          1 tsp coconut blossom sugar
          1 tsp coconut oil
