With their marzipan-like texture and a mild, slightly salty taste, matjes fillets are a versatile combination for small moments of indulgence. Matjes is also known as "virgin herring" because herring that is processed into matjes has not yet produced any milk or roe. However, they have already acquired a high fat content in preparation for reproduction. Ideally, a herring that is processed into matjes is three to five years old.
