The Hüferschwanzel is one of the most underrated cuts of beef. It is also called Tri Tip Cut and is also processed for quick roasting whole or portioned as Tri Tip Steak because it has a high proportion of intramuscular fat. In Viennese cuisine, it is prepared as a roast or as a whole boiled.
Due to the special husbandry and feeding of the Grünauer organic Angus beef, the meat is strong in taste and colour. In combination with the special breed of cattle, the Angus beef, unique, organic quality beef is created. A product for true connoisseurs with a focus on sustainable meat enjoyment.

About the producer:
Our Bioangus Grünau farm is located in the heart of the green Styria in the immediate vicinity of Austria's most important pilgrimage site. We offer our animals ideal living conditions. On our certified organic farm, the cattle have year-round access to the outdoors. In summer, our own alpine pasture in the region at 1,500 metres above sea level offers very high feed quality and plenty of space for undisturbed movement. In winter, we feed them with silage or hay from our own cultivation.
The Biohof Grünau focuses on the highest quality and hygiene standards throughout the entire cycle: from the species-appropriate keeping of the animals, to the slaughter on our own farm, to the storage and processing of the meat. It is the daily lived claim to offer the cattle the best possible quality of life and the customers the best possible meat quality.
