Ingredients

  • 500 g wheat flour Type 700
  • 42 g fresh yeast
  • 250 ml milk
  • 80 g sugar
  • 1 pinch salt
  • 1 egg
  • 80 g butter
  • 1 tsp lemon zest
  • 1 pkg. vanilla sugar

Method

    Warm the milk lukewarm and dissolve the yeast in it.

    Place flour, sugar, salt, egg, soft butter, lemon zest, and vanilla sugar into a bowl.

    Add the milk-yeast mixture and knead everything into a smooth dough (approx. 5-10 minutes).

    Cover the dough and let it rise in a warm place for approx. 45-60 minutes until it has doubled in volume.

    Divide the dough into equal pieces and shape them into round Pinzen. Place on a baking sheet and let rise for another 15 minutes.

    Brush the Pinzen with beaten egg and make three deep cuts with scissors.

    Bake in a preheated oven at 180°C (top/bottom heat) for approx. 20-25 minutes until golden brown.
