The thymus gland (growth gland) of the calf, the so-called sweetbread, is an organ of the calf. It regresses with the age of the animal and is therefore only formed in calves. Before preparation, the sweetbread must be watered to wash out any clotted blood. Gently cooked in a broth, sliced and fried in butter, or baked, a buttery tender delicacy for true gourmets.
