About the producer:
Christanell GmbH has been producing South Tyrolean branded bacon in Naturns for over 20 years. Today, bacon is one of South Tyrol's most important export goods – and also one of the most tested quality products in all of Italy. The quality of South Tyrolean bacon was also recognised by the traditional company Handl Tyrol in neighbouring North Tyrol, when it took over Christanell GmbH in Naturns in 1992. The change of management has brought about hardly any changes for Christanell GmbH. "The employees have remained the same, as have the production processes," says Karl Christian Handl, managing partner of Handl Tyrol.
Today, around 12,000 pieces of ham bacon are produced weekly at the Naturns site with 50 employees who are employed all year round. The most important main markets for sales are still Austria and Germany, but South Tyrolean bacon also finds its way into all other EU countries. Its success is always due to its excellent quality. The seal "Südtiroler Speck g.g.A." may only be used by those who strictly adhere to the specifications. Only the best fresh meat quality from certified farms may be processed, the lean and fat content as well as the salt content must be correct and a maturing period of around 22 weeks is prescribed in order to give the bacon its particularly mild flavour. "It is precisely this gentle maturing in the pure South Tyrolean mountain air, mixed with the Mediterranean-influenced climate, that makes South Tyrolean bacon so unmistakable," says Karl Christian Handl, convinced. To this day, hardly anything has changed in traditional production. At Christanell GmbH, the hams are still rubbed with salt and spices by hand, which is particularly gentle. Machines are only used for control purposes, for example to keep the temperature and humidity constant during the maturing process.
