The Vulcano raw ham is made from the meat of Vulcano pigs. It is salted, pre-dried for several months in pre-curing chambers, and then finished drying in the warm curing chamber over the rest of the curing period. The hams are preserved by the dehydration of the air. Curing losses are around 50% of the original weight.
