Our producer Il pomodoro più buono has the tomatoes harvested by hand when ripe and then preserves them in a water bath at exactly 100 degrees. There is no better way to capture the tomato flavor for perfect sauces. The cherry tomatoes from Sicily receive the same care and have all the flavor of ripe, aromatic tomatoes grown on volcanic soils.
