Sabelli Stracciatella (Mozzarella Cream Cheese)
The curd of this artisanal variety is first cut or torn and then stretched into ribbons, which are folded and shaped. The resulting sweet, fresh, fatty dough is either sold as such or used to fill Burrata cheese.
Character: shiny, white and creamy. Mild, sweet, fresh milk notes. Melts in the mouth; leaves a taste of warm, melted butter.
Serving suggestions: a refreshing summer cheese, served as a main course with crisp salad and tomatoes and a glass of Locorotondo Spumante or Aleatico di Puglia Liquoroso.
