90% Shiraz, 10% Cabernet Sauvignon 14,5% Vol.
This wine is dedicated to an ancestor of the Salomon family, who founded St. Ignatius Collage in Norwood, a suburb of Adelaide in 1870. The grapes ripen on the Fleurieu Peninsula, which is bordered by the Southern Ocean and offers an extremely varied landscape - from rolling hills to historic coastal towns
The midday heat is replaced by cool breezes in the afternoon, which the sea sends into the country, only 10 km away. The vineyards on the Fleurieu Peninsula extend south of Adelaide, including McLaren Vale, along the Adelaide Hills.
The soils are a typical mix of gravel, glacial sands and calcareous red-orange clay.
Tasting note:
Clear ruby garnet.
Fruity and full-bodied on the palate, with dark berry fruit, fine texture and long in structure.
Well-integrated oak. A hint of bitter chocolate in the long finish. The ripe Shiraz fruit is in perfect harmony with the racy Cabernet Sauvignon.
