Ingredients
- 500 g minced beef
- 130 g zucchini (finely grated)
- 130 g carrots (finely grated)
- 100 g yellow onion (finely diced)
- 10 g fresh flat-leaf parsley (finely chopped)
- 80 g long-grain brown rice (uncooked)
- 100 ml water
- 1 tsp dried oregano

- 1 pinch table salt
- 1 pinch black pepper (ground)
Preparation
- 1Preheat the oven to 195–200 °C top/bottom heat. Prepare a suitable baking dish (approx. 25 cm x 35 cm).
- 2In a large bowl, mix the minced beef with the finely grated zucchini, carrots, diced onions, brown rice, chopped parsley, and oregano. Season generously with salt and pepper. Knead everything thoroughly into a uniform mass.
- 3Form the meat mixture into a loaf about 25 cm long and place it in the baking dish. Pour the water into the dish. Bake the meatloaf in the preheated oven for approx. 55–60 minutes until golden brown.
- 4After baking, let the meatloaf rest briefly, slice it, and serve. A fresh green salad pairs excellently with it.
