Ginjo Yuzushu is made from Ginjo sake, which belongs to the premium categories of rice wines. The rice grains of Ginjo sake have a polishing ratio of 60%. The second ingredient of Ginjo Yuzushu is the Chinese citrus fruit Yuzu. The Yuzu fruit bears a strong resemblance to a lemon. Its taste is somewhat sour, slightly bitter, and juicy, but it is more complex and intense than a lemon.
