The best ducks are raised with care and respect for tradition. Here, the ducks roam freely and feed on grains and other goodies so that their meat is tender and flavorful.
When it's time for the harvest, only the legs are selected for the confit. These legs are then gently salted and seasoned with aromatic herbs, allowing them to marinate overnight and absorb the flavors that give each bite a special richness and depth.
Instructions:
In the oven: Preheat the oven to 180°.
After degreasing the legs, place them in a dish with the skin side up and put them in the oven for 15 to 20 minutes, depending on how crispy you want them.
Tip: Keep the fat to cook the potatoes in it.
