Main Ingredients

  • 500 g Spaghetti
  • 225 g pureed spinach (frozen)
  • 100 g Gouda slices
  • 2 pieces bell pepper mix
  • 16 pieces pitted olives (black & green)
  • 1 pinch salt

Tomato Sauce

  • 1 tbsp extra virgin olive oil
  • 1 piece yellow onion
  • 1 clove fresh garlic
  • 115 g tomato paste
  • 800 g canned chopped tomatoes
  • 125 g mozzarella ball
  • 1 pinch ground black pepper

Alternative Colors (optional)

  • 1 handful fresh blueberries (for blue-violet pasta)
  • 1 tbsp ground turmeric (for yellow pasta)
  • 1 tbsp ground cinnamon (for orange-brown pasta)
  • 4 tbsp beetroot from a jar (for red pasta)

Preparation of Colored Pasta

  • 1
Place the pureed spinach in a large pot with water. Salt the water and bring it to a boil. The spinach will dye the water deep green.
  • 2
Cook the spaghetti in the green spinach water according to package instructions until al dente. Then drain. If you don't want any spinach residue on the pasta, you can rinse it briefly with warm water.

Preparation of the Tomato Sauce

  • 1
Finely dice the onion and sauté until translucent in olive oil. Briefly roast the pressed garlic.
  • 2
Add tomato paste and roast for about one minute, stirring constantly. Then add the chopped tomatoes and let everything simmer for about 5 minutes.
  • 3
Season the sauce with salt and pepper. Finally, stir in the diced or shredded mozzarella until it melts slightly.

Bringing the Monster to Life

  • 1
Cut 8 circles (for the eyes) and 8 small triangles (for the teeth) from the cheese slices. Also cut 8 slightly smaller circles from the bell peppers. Halve the olives (black and green).
  • 2
Serving: Place a portion of green pasta on the plate. Place a dollop of tomato sauce in the center. On top of that, place two cheese circles, then the bell pepper circles, and a black olive half as the pupil on each. Arrange the green olive halves as the mouth and place the cheese teeth underneath. The spaghetti monster is ready!
Tip
For other colors: Add beetroot juice for red, turmeric for yellow, or crushed blueberries for blue-violet to the cooking water.
