Austrian nature is an artist in a rush of colors in summer - this is proven by three of our regional dealers BLÜN from Vienna, Altschachl from Lower Austria and Michi Bauer, who grows his green in Rust in Tullnerfeld. When products from one of the best farms land on our plates, we can hardly get enough of them and certainly not eat them. The Viennese start-up BLÜN produces fish and vegetables in a sustainable circular economy, this system is called aquaponics. It works like this: The BLÜN fish grow in Vienna high spring water slowly on. The water in the pools is daily to a certain extent exchanged, but instead of simply diverting it, it is used as a nutrient supplier for the vegetables next door are used - this is how juicy tomatoes and crunchy peppers are created and aromatic aubergines.
