Potato-Pickle-Cheese
This variation of the classic potato cheese is made even more refined by a few finely chopped, slightly sour pickles. Ideal for the next picnic or simply as a small snack with fresh pastries. So delicious, the people sitting next to you will surely turn green with envy!

Recipe for 4-6 people
250 g floury potatoes
1 piece onion
100 g sour cream
100 g organic quark
1 bunch chives
50 g Efko gourmet pickles
10 g mustard
Salt, pepper
Caraway, paprika powder
Wash the potatoes and cook them in salted water until soft. Peel and press them through a potato ricer. Finely chop the chives and onion. Finely chop the pickles. Mix all the ingredients together and season with salt, pepper, a bit of caraway, and paprika.
Tip: If you prefer a finer or milder taste, you can either blanch the chopped onions in water or sauté them in a spoonful of butter until translucent.
