<p>Simple and improves every whim: Potato Noodles</p>

There are as many names for Erdäpfelnnudeln as there are ways to cook and eat them. Our customer Katharina comes from Upper Austria, where they call it Erdäpfeln" (potato noodles). And we Lower Austrians only understand "potato noodles".

 

Whatever they are called, they are tasty and versatile. And everyone can help with the cooking. 

Children and adult kitchen helpers:inside can help peel potatoes, grate them, and shape noodles. 

The dish can be eaten savoury or sweet: with sour cream, cabbage, apple sauce or jam. So sweet tooths (and hangovers as well as kittens) get their money's worth just as much as sour gourmands.

For the potato dough

 

Ingredients: 500g floury potatoes, 1 egg, 100-200g flour, pinch of salt, pinch of pepper, pinch of nutmeg

 

Preparation: Boil potatoes, peel and (when cool) grate. Knead into a dough with egg, spices and flour. Form noodles (long, short, thick, thin - according to your mood), and either boil them in water or fry them in a pan with fat until golden brown.

 

What goes with them: sour cream, salad and sauerkraut or apple sauce, stewed fruit and pudding.
