Here, old rural craftsmanship from the Waldviertel region is combined with modern technology. Specially selected lean pork bellies are given a mixture of sea salt and fine spices and natural flavours. The meat has to rest in this sea salt and spice mixture for a few weeks and is then cold smoked over beech wood. The smoked pork belly then matures for several weeks in fresh air to become farmhouse bacon. The slow air-drying process enhances the special spice and flavour! Everything without added nitrite pickling salt, phosphate and flavour enhancers! Gluten and lactose free!
For the hearty Brettljause at home, due to the appealing colour of the bacon and the spices that subtly stand out in the taste, decoratively sliced up for cold platters or also sliced up as a topping on pizzas excellently suited!
