Forest perennial natural sourdough, cooked potatoes, farm yoghurt and curd cheese from the region make the crumb particularly juicy, while preparation by hand and a sophisticated baking method ensure a crispy crust. Roasted forest perennial rye, a primal variety of rye, from the farmer Ronge (only 8 km to the bakery) gives the bread its slightly spicy roasted note.
