La Nicchia Medium Capers in Extra Virgin Olive Oil
The firm capers are preserved in extra virgin olive oil and can be eaten immediately. They taste good in sauces, salads, on pizzas, in tuna creams, on carpaccio, with cooked ham and poultry, preferably with cold dishes. Their taste is fine and nutty. La Nicchia in Pantelleria, Sicily, shows us how versatile capers can be processed and how varied they are as a spice. There, the buds and fruits, the cucunci, of the caper bush are not only salted or preserved in oil.
