This unique product comes from a new production system in Europe by the company Salmon Evolution. The salmon is farmed on land in tanks ("in-land" farming) and not in the open sea. This system is seen as a future alternative to traditional salmon farming in the sea, in order to enable more sustainable production. The following advantages result from this form of salmon farming:
- No pollution of the world's oceans as with conventional aquaculture
- More animal welfare, due to lower stocking density
- No use of antibiotics
The product quality is comparable to that of standard aquaculture salmon, as well as the nutrient content and a high content of unsaturated fatty acids (omega-3 fatty acids). The flesh is somewhat firmer than standard farmed salmon from the sea.
Salmon Evolution is breaking new ground in land-based farming on the Norwegian coast. The company is responding to the problems of conventional fish farming with a technology-based and sustainable salmon farming on land. The company's goal is to transfer the benefits of the sea to fish farming on land: fresh, UV-disinfected and filtered seawater from sea depths of 25 and 95 meters, which is pumped into protected and strictly controlled tanks on land via a pumping station. Salmon Evolution is a pioneer in the use of this hybrid flow system (HFS), which, among other things, enables completely new control over the water quality and the rearing process, minimizes the risk of contamination and completely avoids the use of antibiotics. The salmon can grow in a safe and optimized environment, as they have sufficient access to fresh, filtered seawater that has optimal flow and temperature and is exchanged every four hours.
The hybrid flow system ensures a controlled water flow, whereby the water flows against the fish and creates a gentle resistance . This naturally encourages the salmon to swim , which leads to a firm flesh structure compared to farmed salmon from the sea. The resistance encourages the fish to exert themselves more when swimming, which promotes the development of a robust physique and optimizes the overall texture and taste of the salmon.
