The fillet steak is supposedly the finest piece of beef. It is a highly sought-after cut, which makes up only 2% of the entire beef and is therefore often in short supply. The fillet steaks are cut from the middle piece of the sirloin. Vacuum aging makes the steaks particularly tender and juicy.
Preparation:
Steaks are best seared in a pan or on the grill and cooked to the correct core temperature. We recommend the steaks be cooked to "medium" or "medium rare", which brings out the intense flavor and makes them particularly tender.
